Quarantine Life: Day 58, Easy AIP Blueberry Crumble
Do you have a sweet tooth like we do? Here’s a simple recipe for autoimmune protocol (AIP)-compliant blueberry crumble. It only takes five ingredients and seven steps, which makes it an easy treat to make during your shelter in place.
AIP Blueberry Crumble
Prep time: 5 minutes
Cook time: 40 minutes
Servings: 8
Ingredients
1 pound of fresh, organic blueberries (frozen also works if you heat them over the stovetop first)
1/2 cup of coconut flour
1 cup of coconut sugar (1/2 cup for the blueberries and 1/2 cup for the crumble)
1 tablespoon of cinnamon
3 tablespoons of melted coconut oil (1 tablespoon for greasing dish and 2 tablespoons for the crumble)
Instructions
Preheat oven to 375 degrees Fahrenheit.
Grease a glass dish with one tablespoon of melted coconut oil.
In a separate bowl, toss blueberries in 1/2 cup of coconut sugar.
Pour sugared blueberries into the glass dish.
In a separate bowl, combine dry ingredients and the two tablespoons of melted coconut oil into a crumble mixture.
Sprinkle crumble mixture over blueberries.
Bake for 35 minutes.
