Quarantine Life: Day 33, Chicory AIP "Coffee"
One thing we miss while we’re on the autoimmune protocol (AIP) diet is coffee. Coffee is a bean, which means it’s off-limits under the AIP. As such, we’ve mostly been having tea for the past three months. When we recently discovered online that some people use chicory as an AIP-compliant coffee substitute, we knew we had to try it for ourselves. Chicory is a flowering plant in the dandelion family and is commonly used in New Orleans and Europe as a coffee enhancer or substitute.
We brewed our first pot of chicory “coffee” today and were pretty happy with the results. Does chicory taste like coffee? Sort of. It tastes more like coffee and sugar. We typically drink our coffee black, so we noticed that chicory is a bit sweeter and less bitter than black coffee, but it does have a bolder, more “coffee”-like flavor than tea. Also, chicory on its own is caffeine-free, so I also added some black tea leaves to the ground chicory for that extra kick.
