Peanut Butter Banana Time!

Brave these chilly March mornings with something warm and hearty in your stomach! Check out this recipe I found on Apartment Therapy for

! The best part, apart from the taste, is that it's super easy to make. I'm sure you can make it with items you already have in your kitchen. I modified the recipe slightly, so here's the recipe below with my changes in parentheses.

Serve with sliced bananas or maybe some ice cream!

Peanut Butter Banana Bread Pudding

Ingredients

  • 4 slices of oat nut bread
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/3 cup of half and half [I used vanilla flavored Coffee Mate for that extra vanilla taste!]
  • 1/2 teaspoon salt
  • 1/4 cup peanut butter
  • 2 ripe bananas thinly sliced
  • [1 teaspoon cinnamon]
  • [2 tablespoons brown sugar]

In a medium mixing bowl, microwave the peanut butter for 30 seconds until nice and gooey. Then add eggs, vanilla, half and half, salt, cinnamon, and brown sugar. Tear the bread into one inch squares and soak in the mixture. Fold in the banana slices gently. Cover the bowl with saran wrap and place in the refrigerator for four hours or overnight.

When you're ready to make them, generously spray a muffin tin with cooking spray. Fill the holes halfway with the pudding mixture and sprinkle some brown sugar on top for some extra sweetness. Pop them into the oven at 400 degrees for 25 minutes or until lightly brown.

I had these for breakfast, but I think they'd make a great dessert a la mode too! Enjoy!
